Chia Strawberry Pudding

Low in sugar and high in all kinds of nutrients, this Chia Strawberry Pudding can be enjoyed as a sweet treat in the evening or can be left to set overnight and enjoyed the next morning.

If you haven’t tried using chia seeds yet, get on the bandwagon. They can be put over salads or into smoothies. When you soak them, they become gelatinous, which is why you see them put in recipes such as this one.

Serves: 4
Time: 10 minutes, plus one hour for soaking and four hours for setting

Ingredients

  • 4 tablespoons chia seeds
  • 200ml water
  • 1 cup strawberries
  • 1 teaspoon maple syrup
  • 1 lemon, juiced
  • 1 teaspoon vanilla extract

 Method

Soak chia seeds in the 200ml of water for one hour. Using a food processor, add the soaked chia seeds, strawberries, maple syrup, lemon juice and vanilla extract, blending until smooth. Pour mixture into four individual ramekins. Place in fridge, covered with plastic wrap for four hours or overnight.
