Drew’s Scotch Eggs

One day, Drew thought to himself: why is it that Scotch Eggs always seem to be fried? So he created Drew’s Scotch Eggs – an oven-baked version of this fattening favourite.

Serves: Eight
Time: 20–30 minutes

Ingredients

  • 8 eggs, boiled to your satisfaction and peeled
  • 700g low fat sausage mince
  • 3/4 cup plain flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs


Method

Lightly dust eggs with flour. Divide sausage meat into eight equal portions and press around the eggs. Dust sausage-wrapped eggs in flour, dip into beaten egg, and roll over the crumbs.

Place the Scotch Eggs on baking paper in the oven at 180°C and cook for 10–20 mins (cooking time depends on how much sausage mince you use).
