Fried Rice for One

What if we told you that in just 10 minutes, you could have a super-tasty, Asian-inspired Fried Rice for One that’s fun to make and is a great way to use leftovers from previous meals. 

Serves: 1

Time: 10 minutes
 

Ingredients

  • 1/2 cup cooked brown rice
  • 1 egg
  • 1/2 cup veggies, ( e.g. frozen peas, sliced carrots, sliced capsicum)
  • soy sauce

 

Method

Crack egg in a small bowl, beat, and set aside. In a small frying pan on medium heat, cook the veggies, add the rice halfway through so it can begin to heat up. Add a tablespoon of water and cover for about two minutes to cook. Add the beaten egg and stir the whole mixture until the egg is done. Add soy sauce to taste.
