Lemon Chutney

When the lemons are falling from the tree, and the neighbours don’t want anymore, why not make some chutney?

Ingredients

  • 4 large lemons
  • 225g onions
  • 450ml malt vinegar
  • 450g sugar
  • 115g raisins
  • 2tbspn mustard seeds
  • 1 tsp ginger
  • 1 tsp cayenne pepper

Method

Wash and slice lemons, removing pips. Peel and chop the onions, put in a bowl with lemons, sprinkle with 2 tablespoons salt and leave for 24 hours.

Transfer with the remaining ingredients to a saucepan, bring to the boil, then reduce heat and simmer until quite tender. 

Pour into sterilised jars and seal securely when cool.
