Prawn and Avocado Salad

Avocado and seafood make a great combination, of which we take advantage in our Prawn and Avocado Salad, loaded with fresh salad ingredients, such as tomatoes and capsicum.

Serves: One

Time: 10 minutes

Ingredients

  • 6 large frozen pre-cooked prawns, thawed
  • 1/4 avocado
  • 1/2 cucumber
  • 1/2 large tomato
  • 4 black olives
  • 1/4 cup chopped green capsicum
  • 1/4 cup chopped red capsicum
  • 1/2 lime
  • salt and pepper, to taste

 

Method

Place prawns in a cup of warm water and once thawed (about five minutes), drain, shell and chop them into smaller pieces. Slice the avocado, cucumber, tomato and capsicum, and mix in a medium sized bowl. Add the prawns and then squeeze the lime juice over the salad and season with salt pepper.
