Breakfast Frittata

Ensure you receive your daily allowance of protein with our Breakfast Frittata, since eggs make a great source of protein and are a perfect way to start your day and keep you full until lunch.

Serves: Two

Time: 15 minutes

Ingredients

  • 5 eggs
  • 1 tablespoon butter
  • 2 tablespoons ricotta
  • 1/2 cup parmesan, finely grated
  • salt, to taste
  • 2 tablespoons chopped parsley leaves


Method

Lightly whisk eggs and season with salt. Heat a pan over a medium-high heat until hot. Add the butter and allow to melt. Then pour in the whisked eggs and stir quickly to move the cooked part of the egg away from the heat for a couple of minutes. When the eggs are starting to look cooked, stop stirring and flatten the top with a spoon and keep cooking for another minute or so until there is only a little runny egg remaining on top. Remove from the heat. Scatter Parmesan over eggs and drop teaspoonfuls of ricotta over the top. Scatter parsley on top and serve.
