Crustless Spinach Pie

Even though the crust is often the best bit of a pie, our Crustless Spinach Pie is so tasty, you won’t even notice it’s not there.

Serves: 2

Time: 40 minutes

Ingredients

    • 2 tablespoons butter
    • 2 eggs
    • 1/2 cup flour
    • 1/2 cup milk
    • 2 garlic cloves, minced
    • 1/2 teaspoon baking powder
    • 110g mozzarella
    • 2 cups fresh spinach, chopped

 

Method

Preheat oven to 180 degrees and melt the butter in a 20cm baking pan. In a bowl, beat the eggs well and add flour, milk, garlic and baking powder. Once blended, pour into baking pan. Stir in the cheese and spinach and bake for 30 minutes or until the pie is firm and cheese is slightly golden.
