Hearty Meatballs with Beans and Rice

Our Meatballs with Beans and Rice is a hearty dish that can be made in one pot. And if beef is not your bag, you can make them using turkey or chicken mince.

Time: 40 minutes

Ingredients

  • 500g beef mince
  • 1 egg, lightly beaten
  • 1/4 cup breadcrumbs
  • 3 cloves garlic, crushed
  • 90g bacon, diced
  • 2 tomatoes, diced
  • 1 red capsicum, diced
  • 1 1/2 cups long grain rice
  • 2 tablespoons parsley
  • 2 tablespoons oil
  • 1 onion, chopped
  • 1 tablespoon paprika
  • 4 cups chicken stock
  • 420g can red kidney beans
  • 100g green beans

Method
Combine the mince, egg, breadcrumbs, one crushed garlic clove, bacon and parsley. Form into 20 meatballs, fry in the oil and set aside.

Cook the onion, remaining garlic cloves and paprika in a pan for one minute. Add three-and-a-half cups of the stock, tomatoes, capsicum and rice and bring to the boil.

Cook for 10 minutes until the rice is tender.

Add the extra stock, meatballs, kidney beans and green beans and cook for a further five minutes.

Serving suggestion: you could use turkey or chicken mince instead of beef
