Rustic Meatballs with Creamy Mash

Today’s tasty Rustic Meatballs and Creamy Mash is an absolute crowd-pleaser. It’s easy to whip up and can be enjoyed by adults and kids alike.

Serves: 2

Time: 30 minutes

Ingredients

  • 150ml vegetable stock
  • 300g lean beef mince
  • 1 tin diced tomatoes
  • 2 teaspoons dried mixed herbs
  • 1 red onion, sliced
  • 400g potatoes, peeled and quartered
  • 2 tablespoons butter
  • 2 tablespoons milk


Method

Preheat the oven to 180ºC. Season and mould the meat mince into meatballs about the size of golf balls.

In a pan, heat and cook the meatballs until they begin to brown. Transfer the meatballs to an ovenproof dish. Return the pan to the heat and heat the tomatoes, herbs, onions and stock, bringing to the boil.

Then carefully pour the mixture over the meatballs and cook in the oven for 10 minutes.

While the meatballs are cooking, bring a large pot of salted water to the boil. Once boiling, add the potatoes and cook them for 10 minutes. Then strain and place the potatoes back in the pot and add the milk and butter before mashing.

Season to taste and serve immediately with the meatballs and side salad.
