Stuffed Tuna Pita Pockets

Our easy recipe for Stuffed Tuna Pita Pockets is tasty and great for a quick lunchtime snack or light dinner option. If tuna isn’t your thing, simply add a slice of ham or chicken, or extra vegetables.

Serves: Two

Time: 10 minutes
 

Ingredients

  • handful of baby spinach
  • half of a small cucumber or tomato, sliced
  • small handful of fresh mint, torn
  • 1 tablespoon fresh lemon juice
  • 100g can tuna in brine
  • 2 mini pita breads

 

Method
Top spinach with cucumber (or tomato), and add mint and lemon juice. Drain and flake the tuna, then stir into the salad. Season to your liking. Slit open the pita breads and warm briefly in a toaster. Stuff pita breads with the tuna salad mix.
