Get snazzy with cabbage

      It’s one of the cheapest vegetables out there but if your only thoughts of cabbage is the smelly soup offered up in Charlie and The Chocolate Factory, this recipe might give you a new appreciation:

      Sauteed cabbage with coriander and lime
      Adding some zesty goodness to sautéed cabbage creates a healthy, affordable lunch option, or a nice side dish for dinner.
      Think low-carb goodness with a little tang.

      Ingredients:
      Green cabbage
      Extra virgin olive oil
      Brown onion
      Garlic (a few cloves will do it)
      Chilli flakes
      Fresh coriander
      Lime juice

      Method:
      Season the cabbage. Heat 3 tablespoons of extra virgin olive oil in a frying pan at medium-high heat.
      Add a small sliced green cabbage, a small sliced onion, and 2 to 3 cloves of minced garlic. The cabbage will cook down quickly. Season with salt to taste, 1 teaspoon of chilli flakes, and a handful of freshly chopped coriander
      Cook the cabbage for about 10 minutes, tossing occasionally as it softens and shrinks.
      Make sure you leave it alone for a few minutes at a time in between to encourage a little caramelisation for deeper flavour.
      If you think it needs to cook down a little more, do an extra few minutes, to suit.
      Finish and serve with a squeeze a lime. For extra flavour, some crumbled fetta, or nutty tahini takes it to another level.
